Staying alive in the digital age

These recipes are designed for extremely busy people who are either studying, are self-employed, Digital Nomads or old fossils who are struggling to make ends meet and want to stay healthy. Each recipe is designed for 2 people, so you can double-up on ingredients for entertaining.

Macaroni cheese with bacon & cheese topping.

3/4 cups dried macaroni

2/3 cups milk

3-4 cups grated strong flavoured cheese

2 tablespoons butter

1 medium sized tomato – sliced

half a pack of bacon

tablespoon dried mixed herbs

tablespoon of minced garlic

freshly ground black pepper and salt to taste

For health, you can put 2/3 cups of fresh broccoli in a sieve on top of the macaroni water.

Instructions

Boil pasta. Cook till al dente.

Make a white sauce by putting the butter in a large pot; add the milk slowly while stirring well, then add the cheese, the garlic and mixed herbs and stir until creamy and smooth. Keep back about 3 cups of the sauce. Reserve about 1/3 of the grated cheese.

Preheat the oven to 180 degrees Fahrenheit.

take a fairly large casserole dish. Pour the pasta into it and pour the cheese sauce over the pasta. Then place the tomato on top; cut the bacon into pieces about 2/3 inches long and place over the tomato. Then pour the remaining sauce over the tomato and top with the rest of the cheese.

Pop into the oven for about 45 minutes or until golden brown on top.

Serve with a green salad.
